The knock sensor on the 3.8 is more like what you're talking about.
It's made by bosch and is a wideband type.
It's just like a re packaged electret microphone ( 20 Hz to 20 KHz) unlike the knock sensors on earlier cars which only resonate at a single frequency when shocked. The resonant sensors are high impedence and output over 10V peak to peak. That's what you're seeing on the scope.
